I’m Joey Pagliai, 3rd generation Owner of Pagliai’s Grinnell. Along with my wife, Haylee, we are honored to serve you the flavors you’ve savored since 1957.
Since 2000 I’ve spent learning the craft and commitment it took my Nonno (grandfather) to keep customers satisfied for over 60 years. I now have the opportunity to continue delighting diners with the same made-from-scratch dishes he passed down. The same recipes, tangy tomato sauce, sausage blends and cheeses will continue to tantalize taste buds.
In 1914 John and Katrina (mama and papa) Pagliai left their native home in Northern Italy to seek a better life in the New World. They crossed the Atlantic Ocean settling in the small mining town of Zookspur, Iowa.
Their new life in the U.S. held much promise, however cravings for the crisp crust of their “tomato tarts”, savory sauces and homemade sausages weren’t left behind. Fortunately for them, and future generations of Iowans, their family recipes were welcomed by neighbors and friends alike.
Frozen pizzas get a bum wrap often for good reason. Nonno! Not ours. Our crust is never cardboard-hard. Our mozzarella, never chewy or mealy. Our veggies are same-day fresh…and our sauce? Fuhgettaboutit! It’s the same, savory special blend with all the same tomato tang and zip.

Watching my Nonno work, hearing his stories as an immigrant son, and witnessing his thoughtful attention to both food and friend, that made me realize I’d likely share his labor of love someday. It’s been a slow build, I had much to learn. Fortunately, I learned from the best. Nonno had me doing odd jobs around the restaurant before I could reach the register. He taught me the discipline of hard work, not only in maintenance and operations of the restaurant, but also in devotion to consistent ingredients and recipes. It’s the details that made him then – now us – the premium pizza and pasta place in Grinnell.
The other key ingredient at Pagliai’s…our people. Simply put, it’s our Pagliai’s team that bring our proud tradition forward into today. So, whether it’s your 50th or 1st time dining at my restaurant, taking our frozens (pizzas) home, you have my promise that you will have that well-fed feeling that only comes from family.

In 1953, son Sam served the first Pagliai’s pizzas to the crowd at his neighborhood bar in Ames, Iowa. The round doughy pies took a little convincing for bar patrons to dig in. But when they did, they kept coming back for more. Gradually, the buzz throughout Ames brought increasing crowds and the bar soon gained restaurant status.
Local appetites for pizza were growing, so in 1957, Sam and his brother, Armond opened the first official Pagliai’s Restaurant in Ames’ Campus town. Called,The Pizza House, Sam and brother Armond simply treated customers as they wished to be treated. That, paired with a winning formula of fresh, authentic Italian food permitted even greater growth to Grinnell, Iowa in the mid 1960’s.
Today, grandson Joey Pagliai and wife, Haylee continue the tradition of serving authentic, generations-old Italian family recipes straight from their stonehearth ovens.
